Noodle Bake: An Easy Side Dish for any Weeknight

I'm a fan of the Pioneer Woman's noodle bake (which also has ground beef and tomatoes...though I sub ground turkey in it!) and switched it up a bit to make it into a SUPER easy side dish. It's so versatile that you can serve it with nearly anything. Just last night I served it with some chicken tequila lime sausage (have you seen it? It's from Guy Fieri's line - SO good!) I picked up for a quick dinner! I usually have all these ingredients on hand anyway, which is great!



Noodle Bake: An Easy Side Dish

1 bag of egg noodles
16 ounces fat free cottage cheese
1 cup light sour cream
3 green onions, chopped (white and green parts)
1/2 cup grated cheddar cheese
Salt and Pepper

Preheat oven to 375.

Cook noodles according to package directions. Combine cooked noodles with cottage cheese, sour cream, green onions and salt and pepper. Pour into a greased baking dish. Top with shredded cheddar. Bake about 10 minutes or until the cheese is melted.

Serve hot.
