Easy. Healthy. Delicious. FAST. Salad!

I'm talking about this:

A satisfying, healthy and quick lunch salad I whipped up the other day.

Here's what you'll need:
Lettuce - I used an organic herb mix
Kidney Beans, dark with skin
Artichoke Hearts, halved
Croutons or something else crunchy
Low or No fat Italian dressing

Clean and dry the lettuce. I often do this as soon as I buy it and then put it in a zip top bag so that I can make sure to get the air out. Next slice the avocados and halve the artichoke hearts. Drain the kidney beans - I don't rinse them but you can if you like. Add a few croutons or something else thats crunchy for good texture and top with Italian (I used no fat).

How's that for a fast and healthy meal? Or you can use it as a first course for dinner. Yum.
